Martin trained under renowned chefs Albert and Michel Roux Jr, Marco Pierre White and Nick Nairn, all of whom influenced his unique cooking style. The restaurant itself, situated in the historical port of Leith brings a blend of modern French and traditional cuisine to the city, using the finest Scottish ingredients. Paul Kitching opened 21212 in May 2009 and the restaurant received its first Michelin star in 2010. It’s the only restaurant in Edinburgh with rooms for you to stay in. A foodie’s delight, he incorporates a varied fusion of flavours and textures showcased in the cuisine. Weekday lunches are served Tuesday to Friday with a set menu for 2 courses starting from £22.
