Innovating Traditional Cuisine
Borago was launched in 2006 with the goal to make traditional Chilean cuisine appealing to a global audience while showcasing the nation’s varied produce.
After a decade of persevering and holding on to their dream, Borago’s passion for innovation paid off. The classy restaurant featured in Latin America’s 50 Best Restaurants of 2016 and was also honoured as the Best Restaurant in Chile, 2016. The chef Rodolfo Guzman was the winner of the Chef’s Choice Award in 2015.
All the dishes at Borago are designed in an inventive and artistically manner but presented in stark contrast on a minimalist palette. The simplistic presentation is deliberately planned to reflect the generous produce of Chile and to honour the bounty of Mother Earth.
To enjoy a quick sample of the culinary spectrum at Borago, ask for ‘Endemica Menu’ which contains eight small courses that highlight Chile’s vast range of produce from its different regions. Other notable dishes include Lamb a la Inverse and Venison Tartare.
